Hi there! Today I’m sharing one of my favorite quick and easy weeknight dinner meals. This Sausage and Pepper Tortellini Pasta is the perfect way to elevate pasta into a filling meal, and is a great answer to last minute dinner guests! This is the type of meal I call a Target dinner, because you can grab the ingredients while you’re at Target running errands and don’t have to go to traditional grocery store. Here’s what you’ll need!

Sausage and Pepper Tortellini Pasta
Ingredients:
- Pre-made tortellini. Any brand you like, frozen or refrigerated.
- Pasta sauce.
- Red, Yellow, and Orange peppers.
- Ground Mild Italian sausage.
- Olive oil.
Start by chopping up half of each of your peppers. Throw the rest of the peppers in a bag and save them in the fridge for another meal. Add some olive oil to a pan, and start cooking your peppers on medium heat. After a few minutes, add a splash of water and cover your pan with a lid, and let your peppers steam until they start to soften.

In the meantime, bring a big pot of water up to a boil, and throw in your tortellini and cook them according to package directions.
When the peppers have softened, take off the lid and continue to cook them until they’ve browned a little. Then take them out of the pan and set them aside. Wipe the pan out and start cooking your ground Italian sausage.
When your tortellini are ready, let them drain in a colander. Add your pasta sauce and cooked peppers to the big pot, and then throw in your tortellini. Let it cook on low while you’re sausage is cooking.
When the sausage is done, drain the grease and add it into your pasta. Mix it well and let everything cook on low for 5-10 minutes, stirring regularly, to let all the flavors meld together. Then just pop it on a pretty plate…

And you’re all done! This meal only take about 20 minutes to make and can feed a couple or a large group. It’s one of those perfect meals to have in your back pocket for super busy weeks, especially during the chilly winter months.
