Healthy Breakfast Egg Bites

Hello! Breakfast usually has to be a pretty quick event at our house, so I love anything that can be made ahead of time and reheated. Also, anything that includes cheese and bacon is a winner in my book! Today I’m going to show you how to make these Healthy Breakfast Egg Bites that kids absolutely love!

Healthy Breakfast Egg Bites

Ingredients:

  • 7 extra large eggs (or 8 large eggs)
  • 1/4 cup whole milk
  • 2 cups lightly steamed broccoli, chopped small
  • 1/2 cup cooked bacon, crumbled
  • Cheddar cheese, about 1/2 cup shredded
  • Non-stick spray
  • Salt
  • Pepper

Note: You can replace the bacon with cooked ham, steak, or other proteins. You can also replace the broccoli with lightly cooked spinach, pepper, onion, or any vegetable you’d typically pair with eggs! As for cheese, that’s all up to you!

Start by preheating your oven to 350 degrees Fahrenheit.

I always get the steamer bags of broccoli, so I just steam a bag of broccoli in the microwave for about half the time recommended on the package, usually about 2 minutes. If you’re preparing it in a standard steamer, just cut down the cooking time a bit so it’s firm but tender. Cook your bacon however you like, whether it’s microwave, oven, or fried. I have to admit I think fried bacon still tastes the best! Drain it on some paper towels so it gets a little crispy.

Go ahead and chop your broccoli up into small pieces. Then crumble up your bacon. Spray your muffin pan with non stick spray and put a little broccoli in each cup.

Then just add a little (or a lot!) of bacon into each cup, and mix it up with the broccoli. Now you’re going to take your eggs and crack them all into a large bowl. Add 1/4 cup of whole milk.

And add salt and pepper to taste. Keep in mind that bacon is already salty, so add less than your normally would! Scramble up your eggs with a fork or a whisk until they’re well mixed and it’s bubbly. That’s how you know you whipped enough air into the eggs and they’re bake up light and fluffy. Now just go ahead and spoon the egg mixture into your muffin cups, about 2/3 of the way up each cup.

Next you’re going to add a sprinkle of cheddar cheese to the top of each one, then pop them in your 350 degree oven for 20 minutes.

When they’re done, let them cool for a few minutes, and use a knife or spoon to pop them out of the muffin cups!

They look as good as they taste!

And the ingredients distribute evenly through the egg, so it looks pretty cut open too. Normally my 10 year old HATES broccoli, but she loved these and asked for more! She asked how I managed to make broccoli taste good. I told her that it tastes good anyway, but bacon and cheese work miracles.

These can be eaten right away, or stored in an air-tight container in the fridge for up to 2 days. When you’re ready to heat it back up, just wrap one in a paper towel and microwave for 10 seconds, let it rest for 5 seconds, and heat again for another 10 seconds. That’s how to get them nice and hot without overcooking the egg!
