Healthy Baked Sweet Potato Fries
Ingredients:
- Sweet potatoes. Plan on one medium potato per adult person.
- Vegetable oil or other cooking oil of your choice.
- Salt.
Pre-heat your oven to 420F. Start by peeling your sweet potatoes, then cutting off the ends. I recommend using an extra sharp knife, as sweet potatoes can be tougher to cut than their standard potato counterparts. Cut the potatoes into roughly 3 inch long sections, then cut them into slices.

Then cut each slice into fry sized pieces. Put all your fries in a bowl, and drizzle them with your vegetable oil. Then add salt to taste.
Line a baking sheet with parchment paper, and spread out your fries in a single layer. You may need to use two baking sheets, because you don’t want to over crowd the fries.
Bake them in your 420F oven for 30-45 minutes, or until done. I always test mine by poking them with a fork, and then doing a taste test. Be careful though, they’ll be very hot! Sometimes my fries crisp up, sometimes they don’t. You can always experiment with cooking temps and times to find the best match for your particular oven.
And you’re all done! These are a great side dish to throw in the oven while you cook something on the stovetop, or even a great make ahead snack for lunches.
