It’s a twist on traditional avocado toast and a good balance of carbs, protein, and healthy fats. This is super fast to put together, even for a large group. You can hard boil the eggs ahead of time, and as long as you keep some tomatoes, bread, and avocado in your kitchen, you’re good to go. Easy Morning Monster Toast

Ingredients:

  • Whole wheat bread
  • Avocado
  • Hard boiled egg
  • Small tomato
  • Salt and pepper

Start by toasting your bread! While it’s toasting, peel your hard boiled egg and slice it into medium thick slices. These are the monster eyes! Now take your small tomato and cut it in half.

Cut a thin half slice from your tomato. This is going to be the monster’s mouth. You can save the rest for later or cut it up and serve it next to the toast. Then you’re going to carefully cut your avocado in half. Store one half in the fridge for later, and put the other half in a bowl.

Mash the avocado up will with a fork, and spread it on your toast. Top it with salt and pepper to taste. Then go ahead and add your egg monster eyes.

Add on the monster’s silly tomato smile and you’re all done! See how the seeds look like pointy teeth? This is a great way to help kids get over a fear of green food and get some extra nutrition into those picky eaters.
